The Best Cookie Bars. Ever.

See my full disclosure policy here.

At least in my opinion!

This is a recipe that my mom made for Christmas, and now I love making it too. It makes a great addition to treat plates for the neighbors!

It's so yummy, with toasted coconut, a meringue, nuts, chocolate...everything that is yummy. Unless you don't like those things. Then you might not like these. But if you do, you're in for a treat, because they are even better together.

So here's the recipe.
Best Ever Cookie Bars

3/4 c margarine or butter
1/2 c brown sugar
1/2 c white sugar
3 eggs (separated)
1 t vanilla
2 cups flour
1/4 t baking powder
1/4 t baking soda
6 oz chocolate chips
1/4 c nuts
1 c brown sugar
1/2 c coconut

Cream margarine, 1/2 c brown sugar, white sugar, egg yolks and vanilla. Add flour, baking powder and baking soda. Pat into a greased 9 x 13 pan. Bake at 350 for 10 minutes.
While this is baking, beat egg whites until frothy. Add 1 cup brown sugar, a little at a time, and beat until stiff but not dry.
Remove pan from oven and sprinkle nuts and chocolate chips evenly over the base. Spread meringue on top of this layer and sprinkle coconut over all. Return pan to the oven and bake 10 more minutes, or until meringue is set and coconut is toasted.
