Chocolate Lava Cake

Doesn't this look heavenly?  And you can't even see the warm, melty, gooey, chocolatey inside.

I was planning on posting these during Chocolate Week, but then my husband brought this chocolate mousse cheesecake home on the day I was planning on making them.  Needless to say, I didn't feel the need to make anything chocolate after that.

But I finally got around to making them {because the cheesecake didn't last forever} so here they are.

Chocolate Lava Cakes {Ghirardelli}

2 oz semi-sweet baking chocolate
1/4 c heavy cream

Melt the chocolate and whipping cream in a small bowl in the microwave, stirring every 15 seconds.  Whisk gently to blend. Refrigerate two hours until firm.  Form into six balls; refrigerate until needed.

4 oz semi-sweet baking chocolate
8 T butter
2 whole eggs
2 egg yolks
1/2 c sugar
1/2 tsp vanilla
1/4 c flour
Sweetened whipped cream and hot fudge sauce

Heat oven to 400.  Spray a jumbo muffin tin (6-cup) with cooking spray. Melt chocolate and butter in a small bowl in the microwave, 30 seconds at a time, until creamy. Whisk gently to blend and set aside. In a medium bowl, with an electric mixer, whisk eggs, egg yolks, sugar, and vanilla on high speed for about four minutes, or until thick and light. Fold in melted chocolate mixture and flour into egg mixture, just until combined. Spoon batter into muffin cups. Place a chocolate ball in the middle of each cup. Bake for 15 minutes exactly. LEt the cakes sit out of the over for about 5 minutes. Run a small, sharp knife around the inside of each custard cup, and invert cups onto four plates. Serve warm with sweetened whipped cream and hot fudge sauce.

Yummy! Here's another look:
